
1 cup of quinoa, cooked
1 can of black beans, drained and rinsed
1 red bell pepper, diced
1/2 red onion, diced
1/4 cup of cilantro, chopped
2 tbsp of olive oil
1 tbsp of lime juice
1 tsp of cumin
Salt and pepper, to taste
Directions:
In a large bowl, mix together the cooked quinoa, black beans, red bell pepper, red onion, and cilantro.
In a small bowl, whisk together the olive oil, lime juice, cumin, salt and pepper.
Pour the dressing over the quinoa mixture and toss to combine.
Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
