Ingredients:
1 cup cooked and diced seitan
1 cup finely sliced mushrooms
1 cup finely sliced onions
1 cup finely sliced bell peppers
3 cloves of minced garlic
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 teaspoon dried oregano
1 teaspoon ground cumin
Salt and pepper, to taste
Pita bread or lettuce, for serving
Instructions:
In a pan over medium heat, sauté the mushrooms, onions, bell peppers, and garlic in olive oil until they are softened, about 8-10 minutes.
Stir in the cooked seitan, red wine vinegar, oregano, cumin, salt, and pepper. Cook for an additional 2-3 minutes.
