Ingredients:
- 1 cup all-purpose flour
- 1/2 cup rolled oats
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1/2 cup vegan butter, room temperature
- 1 teaspoon vanilla extract
- 1/4 cup aquafaba (the liquid from a can of chickpeas)
- 1 cup vegan chocolate chips
Instructions:
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, mix together the flour, oats, baking powder, baking soda, and salt.
- In a separate large bowl, use an electric mixer to beat together the brown sugar, granulated sugar, and vegan butter until creamy.
- Add the vanilla extract and aquafaba to the butter mixture, and mix until well combined.
- Gradually add the dry ingredients to the butter mixture, mixing until just combined.
- Fold in the chocolate chips.
- Use a spoon or cookie scoop to drop balls of dough onto the prepared baking sheet.
- Bake for 12-15 minutes or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
