Ingredients:
- 1 cup dry black beans
- 1 onion, diced

- 1 tsp smoked paprika
- 1 tsp ground cumin

Instructions:
- Rinse the black beans and soak them in cold water overnight.
- Drain and rinse the beans, then place them in a large pot with enough water to cover them by 2 inches. Bring to a boil, then reduce the heat to low and simmer until the beans are tender, about 1-2 hours.
- Heat a large pan over medium heat and add a drizzle of olive oil. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the tomatoes, bell peppers, vegetable broth, tomato paste, paprika, cumin, oregano, bay leaf, salt, and pepper to the pan. Stir to combine.
- Add the cooked beans to the pan and bring the mixture to a boil. Reduce the heat to low and simmer for an additional 15-20 minutes, or until the vegetables are tender.
- Serve the feijoada over rice and sprinkle with chopped parsley. Enjoy!
