- 1 large onion, diced

- 2 bell peppers, diced

- 1 tsp caraway seeds
- Salt and pepper to taste
- Olive oil
- Chopped parsley for serving (optional)
- Heat a large pan over medium heat and add a drizzle of olive oil. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
- Add the bell peppers, tomatoes, tomato paste, vegetable broth, paprika, caraway seeds, salt, and pepper to the pan. Stir to combine.
- Reduce the heat to low and simmer for 20-25 minutes, or until the vegetables are tender.
