  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 2 bell peppers, diced
  • 1 cup diced tomatoes
  • 2 tbsp tomato paste
  • 1 cup vegetable broth
  • 1 tsp paprika
  • 1 tsp caraway seeds
  • Salt and pepper to taste
  • Olive oil
  • Chopped parsley for serving (optional)

Instructions:

  1. Heat a large pan over medium heat and add a drizzle of olive oil. Add the onion and garlic and cook until the onion is translucent, about 5 minutes.
  2. Add the bell peppers, tomatoes, tomato paste, vegetable broth, paprika, caraway seeds, salt, and pepper to the pan. Stir to combine.
  3. Reduce the heat to low and simmer for 20-25 minutes, or until the vegetables are tender.
  4. Serve the lecsó hot, garnished with chopped parsley if desired. Enjoy!
