Ingredients:

  • 1 cup dried lima beans
  • 1/2 cup dill, finely chopped
  • 1/4 cup cilantro, finely chopped
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon turmeric
  • 1/2 teaspoon ground cumin
  • Salt and pepper, to taste
  • 2 tablespoons vegetable oil
  • Water, as needed

Instructions:

  1. Soak the lima beans in water overnight.
  2. Drain and rinse the lima beans, then transfer them to a pot. Cover the beans with water and bring to a boil over medium-high heat. Reduce the heat to low and simmer until the beans are tender, about 1 hour.
  3. In a separate pan, heat the oil over medium heat. Add the onion and cook until it is translucent, about 5 minutes.
  4. Add the garlic and cook for an additional minute.
  5. Stir in the tomato paste, turmeric, cumin, salt, and pepper. Cook for 2 minutes.
  6. Add the dill and cilantro to the pan and cook for an additional minute.
  7. Add the cooked lima beans to the pan and stir to combine. If the mixture is too thick, add a little water to thin it out.
  8. Simmer the ghatogh for 5-10 minutes, or until heated through.
