Ingredients:

  • 1 cup unsweetened plant-based milk
  • 1/2 cup silken tofu
  • 2 tablespoons nutritional yeast
  • 1/4 teaspoon turmeric
  • Salt and pepper, to taste
  • 1 pre-made pie crust or 1 recipe for homemade pie crust
  • 1/2 cup vegan bacon bits
  • 1/2 cup diced onions
  • 1/2 cup grated vegan cheese

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a blender, combine the plant-based milk, tofu, nutritional yeast, turmeric, salt, and pepper. Blend until smooth and set aside.
  3. In a skillet over medium heat, cook the vegan bacon bits and onions until the onions are translucent.
  4. Place the pre-made pie crust in a pie dish.
  5. Sprinkle the vegan cheese over the bottom of the pie crust.
  6. Top the cheese with the vegan bacon and onion mixture.
  7. Pour the tofu mixture over the top of the vegan bacon and onions.
  8. Bake the quiche for 35-40 minutes, or until the top is golden brown and the quiche is set.
  9. Remove the quiche from the oven and let it cool for a few minutes before slicing and serving.
