Ingredients:
- 1 cup unsweetened plant-based milk
- 1/2 cup silken tofu
- 2 tablespoons nutritional yeast
- 1/4 teaspoon turmeric
- Salt and pepper, to taste
- 1 pre-made pie crust or 1 recipe for homemade pie crust
- 1/2 cup vegan bacon bits
- 1/2 cup diced onions
- 1/2 cup grated vegan cheese
Instructions:
- Preheat the oven to 350°F (175°C).
- In a blender, combine the plant-based milk, tofu, nutritional yeast, turmeric, salt, and pepper. Blend until smooth and set aside.
- In a skillet over medium heat, cook the vegan bacon bits and onions until the onions are translucent.
- Place the pre-made pie crust in a pie dish.
- Sprinkle the vegan cheese over the bottom of the pie crust.
- Top the cheese with the vegan bacon and onion mixture.
- Pour the tofu mixture over the top of the vegan bacon and onions.
- Bake the quiche for 35-40 minutes, or until the top is golden brown and the quiche is set.
- Remove the quiche from the oven and let it cool for a few minutes before slicing and serving.
