Ingredients:
- 1 cup dried chickpeas, soaked overnight and drained
- 1/2 small onion, roughly chopped
- 2 cloves garlic, roughly chopped
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh cilantro
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp chili flakes (optional)
- 1/2 tsp salt
- 1 tbsp lemon juice
- 2 tbsp all-purpose flour
- Oil for frying
Instructions:
- In a food processor, pulse the chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, chili flakes (if using), salt, and lemon juice until well combined and a rough paste forms.
- Add the flour to the chickpea mixture and pulse a few more times until everything is well combined.
- Heat a few inches of oil in a large pot or deep fryer to 375°F (190°C).
- Using your hands, shape the falafel mixture into small balls or patties.
- Carefully place a few falafels into the hot oil and fry until golden brown, about 2-3 minutes.
- Remove the falafels from the oil with a slotted spoon and drain on a paper towel-lined plate.
- Repeat with the remaining falafel mixture.
