Ingredients

  • 1 cup cooked brown rice
  • 1 cup cooked black beans
  • 1 cup finely chopped vegetables (such as bell peppers, onions, mushrooms, or zucchini)
  • 1/2 cup rolled oats
  • 2 tablespoons tomato paste
  • 2 tablespoons soy sauce
  • 2 tablespoons nutritional yeast
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon cumin
  • Salt and pepper, to taste

Instructions:

  1. Preheat your grill or stovetop griddle to medium-high heat.
  2. In a large bowl, mash the black beans with a fork or potato masher until they are mostly broken down.
  3. Add the cooked rice, chopped vegetables, oats, tomato paste, soy sauce, nutritional yeast, olive oil, garlic powder, onion powder, cumin, salt, and pepper to the bowl. Mix everything together until well combined.
  4. Divide the mixture into 4 equal portions and shape each portion into a patty.
  5. Grill the patties for about 5-7 minutes on each side, or until they are nicely browned and heated through. Alternatively, you can cook the patties in a pan on the stovetop over medium-high heat for about the same amount of time.
